Here's my latest heart clogging belly fat enhancing addiction.
1 box of pasta (bow-ties, rotini or penne will do)
3 tablespoons of butter (more or less if desired)
1 cup olive oil (or more)
8 oz Parmesan cheese (whole container)
Optional: frozen Italian meatballs, quartered
Cook pasta
microwave butter & olive oil in a big bowl so it is melted and warm
dump in cooked pasta & mix thoroughly with meatball pieces
dump in Parmesan cheese and mix more. If it seems dry add more olive oil
This gives me two meals worth ready to eat plus enough for three containers to freeze for those days I'm lazy and want something quick I can thaw in the microwave. I usually get two servings from each container.
After it's frozen and microwaved, it's gooey and delicious with the oil and butter in the bottom of the bowl to swirl things around in. 20 or so minutes to make 6 or 7 meals I can eat throughout the month is not a bad deal.
