Legally speaking, no one can claim a right to "self defense" when they start the brawl. hat is a well established legal principle. Otherwise folks could go around punching random strangers in the nose, then shoot them when they respond in kind. That's not legal, nor can it be classified as "self defense".
Iran most definitely started this brawl, ergo, no possible claims of a right to "self defense".
Additionally, there is a concept known as "escalation of force". It allows for the level of force necessary to overcome resistance from the opponent, and no more. Iran has also violated that principle, although their capacity to continue doing so is rapidly diminishing.

Israel attacked first, so they do have the right to defend themselves. International Law states:
"Under international law, a state may use force against another state only in two circumstances: self-defense in response to an armed attack, or with authorization from the United Nations Security Council under Chapter VII of the UN Charter."
