Tomato Powder: Huge Excitement! - ABNARTY - 09-30-2023

I made tomato powder for the first time. The recipe is easy. Thinly slice some tomatoes, dehydrate, grind up (I use a coffee bean grinder), and store. Of course you can add what you want to your taste. Maybe onion powder or garlic powder. Salt. Whatever. 

My thoughts?
1. It takes a lot of tomatoes to make a little powder. It takes a long time to dehydrate. Yes, I know tomatoes are mostly water.
2. It's a mess. My dehydrator may never be the same. 
3. The powder sticks to every thing. 
4. It smells very tomato-ee.
5. Canning tomatoes is quicker.

If you have a specific need for tomato powder, go for it. It's not hard. If you are just looking for a way to preserve tomatoes, there are easier ways. I find canning is less mess and less time consuming than the powder believe it or not. 

If you can sauce, you have a ready, quick meal. Just add noodles. The powder is just a ingredient for something else. You still have to make it. So it takes longer on the back end too. 

The jelly jar in the picture is the result of 8 trays of dehydrated, sliced 'maters.
